Romesco Sauce
2 red peppers, roasted, peeled, and seeded
1/4 cup hazelnuts, roasted and skinned
2 cloves garlic, peeled
1 tablespoon coarsely chopped rosemary
2 tablespoons sherry vinegar
1 teaspoon sugar
1 teaspoon salt
1/2 cup extra-virgin olive oil
Process all of the ingredients in a food processor or blender until the hazelnuts arefinely ground. With the machine running, pour the olive oil in in a steady stream. The sauce can be stored in the refrigerator for
up to one week. Bring it to room temperature before serving.
